The preference sheet

Before boarding, every party completes a preference sheet, allergies, aversions, the birthday to be ambushed with a cake, whether breakfast means espresso and silence or a full table. It reads like admin and functions like a menu consultation: the galley provisions the entire week against it. Dietary requirements are not accommodated; they are designed for.

The coast writes the menu

Queensland waters mean reef fish and prawns that were swimming that morning; the Sydney run means the fish market by tender; Fiji means village-grown produce and whatever the deckhand's handline surrendered at dusk. The provisioning comes out of the APA at cost, you are paying grocer's prices for a private chef's output, which remains one of chartering's better-kept secrets (the full cost structure is in what a charter actually costs).

The venues

Breakfast on the aft deck at anchor. A long al-fresco lunch under way. A beach barbecue set on a sand cay that will be underwater by midnight. Formal dinner in the salon on the one cool evening, and dessert on the sun deck after. Same galley, five restaurants a day, and the milestone dinners, the proposal, the anniversary, staged with the crew as co-conspirators.
